{Whole Wheat Bagels}


1c warm water
3c whole wheat flour
1 1/2Tbsp sugar
1 1/2tsp salt
1 1/2tsp yeast

Mix ingredients (it says to use a bread machine - I put the water and sugar together, then sprinkled yeast on top and let it activate for about 10 minutes) until smooth, knead if desired. Let rise 20 minutes.

Cut into 8 equal pieces, roll into balls, poke hole in center and shape like a bagel. Rest on greased cookie sheet in Warm place for 15 minutes (if you don't have a good warm spot, heat the oven to 175 and then turn it off before you put 'em in).

Bring 3" of water to a boil in a wok and dissolve 2Tbsp sugar in it.

Once the bagels come out of the warm place, boil them in the wok for 1-2 minutes each, turning them as they boil. Drain them and place them back on the greased cookie sheet.

Bake them in the oven at 500 for about 10 minutes (I started with 8 then checked every two minutes until they looked right).

Get out some butter, Earth Balance, or natural peanut butter... and enjoy!

Last week, Ben and Liat whipped together some whole wheat bagels from scratch, and it was the first time I'd ever had such a treat (topped w/ peanutbutter & honey).

Apparently adding sugar to the boiling water is what makes the bagels shiney.
